BBQ Pork Belly Burnt Ends

Step 1:

Set Canadian Grill to 135C to pre heat for 15 mins

Step 2:

Slice up some cubes of belly pork and run with a pork rub - a spicy rub works better as I am going to finishe these with a sweet BBQ sauce.

 

Step 3:

Let the rub sit on the pork belly cubes for 15 mins first then put on the grill fat facing down

Step 4: 

Cook the pork belly cubes for 3 hours, spritzing with apple juice every 45 mins or whenever it starts to look dry.

Step 5: 

Pull the Pork belly cubes with they reach 190F / 90C internal temp, You can pull them sooner but I want it to be really tender.

Step 6:

Put the cubes in an aluminum tray and toss the cubes with more pork rub 

Step 7:

Cover the cubes with BBQ sauce and drizzle a bit of honey on top. Then toss the cubes to ensure they are completely coverd 

Step 8:

Return the tray to the grill for another hour or until all the liquid has reduced and caramelised

Step 9:

All them to cool for 15mins before serving - then enjoy!
