Smoked BBQ Baby Back Ribs 3-2-1

Ingredients: Brown sugar, Honey, Apple Juice, BBQ sauce, Pork Rub, Yellow Mustard, Aluminium/tin foil, Glazing brush,

 

Step 1: Remove the membrane from your ribs using a butter knife into the middle rib to pry up the membrane then using a paper towel (for grip) pull the membrane away from the back of the ribs

Step 2: Pre heat the grill to 82C 

Step 3: Cover the ribs in mustard as a binding agent and add pork rub, add a few drops of worcester sauce and some apple juice

 

Step 4: Put the ribs onto the grill, meat facing up for either 3 hours or until the internal temp of the meat reaches 71C

Step 5: Lay out 4 long sheets of tin foil on a plate (2 if heavy duty) , transfer the first rib onto the tin foil and fold up the edges to prevent leakage. 

Step 6: Heat the grill up to 107C 

Step 7: Drizzle honey and add brown sugar to the ribs on both sides and rub in with a spoon. Add some apple juice then fold the tin foil around the rib and put back onto the grill in the foil for an additional 2 hours or until the internal temp reaches 96C

Step 8: Take the ribs out and remove the foil, glaze the ribs with your choice of BBQ sauce on both sides. Put back on the grill without the foil meat facing up again until the sauce tightens 30 to 60 mins more.

Step 9: Remove the ribs and wrap in tin foil or butchers paper for a few mins to allow them to rest
